Turkey & Cauliflower Rice Stir-Fry

This stir-fry delivers on taste and nutrition, providing a satisfying meal that's both light on carbs and rich in essential nutrients. Let's explore how to create this delightful dish!


Ingredients:

250g turkey breast mince

200g cauliflower rice

1 red bell pepper, sliced

100g broccoli florets

2 tablespoons soy sauce (low-sodium)

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 spring onions, sliced

A pinch of chilli flakes (optional)

Salt and pepper to taste


Instructions:

Prepare the Ingredients: Have all your vegetables and turkey mince ready, making the cooking process smooth and quick.

Cook the Turkey: Heat a large frying pan or wok over medium-high heat. Add the sesame oil, followed by the garlic and ginger. Stir-fry for 1 minute until fragrant. Add the turkey mince and cook until browned.

Add the Vegetables: Add the broccoli florets and sliced red pepper to the pan, stir-frying for 3-4 minutes until they start to soften.

Incorporate the Cauliflower Rice: Add the cauliflower rice, soy sauce, and optional chilli flakes. Stir well to combine all ingredients and cook for another 3-4 minutes.

Finish and Serve: Adjust seasoning with salt and pepper as needed. Sprinkle with sliced spring onions before serving. Enjoy your stir-fry hot for the best taste experience.

You NEED to try these delicious Chocolate Hazelnut Fudgy Brownie Bites made using our Chocolate Hazelnut Shake 🍫✨🤎

They’re high-protein, flourless, super fudgy and made with healthier ingredients… the perfect sweet treat when those chocolate cravings hit 🙌

✨ What you’ll need:

•1 packet Shake That Weight Chocolate Hazelnut Shake
• 2 ripe bananas, mashed
• 1/2 cup Greek yogurt
• 1/4 cup honey, maple syrup or sweetener
• 2 eggs
• 1 cup oat flour
• 1/2 cup cocoa powder
• 1/2 tsp baking powder
• Pinch of salt
• 2–3 drops vanilla extract

Optional:
• Splash of milk if the mixture feels too thick
• Handful of chocolate chips if you want an extra indulgent touch 🍫
(I made mine without chocolate chips!)

✨ Method:
Preheat your oven to 175°C and line an 8x8 inch baking tray with parchment paper or use a silicone baking dish.
Mash the bananas, then mix in the Greek yogurt, eggs, sweetener and vanilla.

In a separate bowl, combine the oat flour, cocoa powder, Shake That Weight shake packet, baking powder and salt.
Gradually fold the dry ingredients into the wet mixture until just combined - avoid overmixing as protein-based bakes can become rubbery.

Fold in chocolate chips if using, then pour the mixture into your baking dish and bake for 20–25 minutes.
Allow to cool completely before slicing so they set properly ✨

Quick tip - keep mine in the fridge as the yogurt and bananas help keep them extra moist and fudgy 😍
