Flavourful High-Protein, Low-Carb Recipe: Cottage Cheese & Chive Stuffed Mushrooms

Cottage Cheese & Chive Stuffed Mushrooms

Ingredients:

12 large button mushrooms

150g cottage cheese

30g grated Parmesan cheese

2 tablespoons fresh chives, chopped

1 clove garlic, minced

1 tablespoon olive oil

Salt and pepper to taste


Instructions:

Preheat the Oven: Set your oven to 200°C (392°F).

Prepare the Mushrooms: Gently clean the mushrooms with a damp paper towel. Remove the stems and set the caps aside. Finely chop the stems.

Make the Filling: In a bowl, combine the chopped mushroom stems, cottage cheese, Parmesan cheese, chives, garlic, salt, and pepper. Mix until thoroughly combined.

Stuff the Mushrooms: Place the mushroom caps on a baking tray lined with parchment paper. Spoon the cottage cheese mixture into each mushroom cap, pressing down gently to pack the filling.

Bake: Drizzle olive oil over the filled mushrooms. Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the tops are golden.

Serve: Allow to cool slightly before serving. Enjoy warm as a delightful appetizer or snack.
