Ingredients

  • 400g sweet potatoes, halved
  • 400g green beans, trimmed
  • 400g dark salad greens, rinsed
  • 2 tablespoons chopped fresh basil
  • 600g cherry tomatoes
  • 1 tablespoon red onion, diced
  • 4 tablespoons red wine vinegar
  • 2 teaspoons olive oil

Method

Boil potatoes until tender for about 10-12 minutes. Microwave green beans in covered container for 4 minutes until crisp-tender. Toss all ingredients together and serve on chilled plate.
