This tasty salad is a meal by itself.
You can prepare it ahead of time and toss it with oil and vinegar just before serving.

Ingredients

  • 200g ready-to-serve romaine lettuce or salad mix
  • 1/2 red onion, chopped
  • 175g black beans, drained and rinsed
  • 1 orange, peeled and diced
  • 1 tomato, diced
  • 1 Tbsp olive oil
  • 3 Tbsp red wine vinegar
  • 1 tsp dried oregano
  • black pepper to taste

Method

  1. Toss all ingredients together in large salad bowl.
  2. Serve immediately.
  3. Note: If you are travelling with this salad, combine all ingredients except oil and vinegar.
  4. Keep refrigerated or chilled in covered container.
  5. Toss with oil and vinegar just before serving.
