Courgette Noodles with Pesto & Grilled Chicken

This dish combines tender grilled chicken with fresh courgette noodles, all tossed in a vibrant pesto sauce that enhances every bite with herby goodness.


Ingredients:

2 large courgettes (about 300g), spiralised

2 chicken breasts (about 200g each)

2 tablespoons olive oil

100g fresh basil leaves

50g pine nuts

50g Parmesan cheese, grated

2 cloves garlic

Salt and black pepper to taste

Lemon wedges for serving (optional)


Instructions:

Prepare the Pesto: In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, and 1 tablespoon of olive oil. Blend until smooth. Season with salt and pepper to taste.

Grill the Chicken: Heat a grill pan over medium-high heat and drizzle with the remaining olive oil. Season the chicken breasts with salt and pepper. Grill the chicken for about 5-6 minutes on each side, or until cooked through. Remove from heat and let rest for a few minutes before slicing.

Cook the Courgette Noodles: In the same pan, add the spiralised courgette noodles and sauté for 2-3 minutes until just tender.

Combine Ingredients: Toss the cooked courgette noodles with the prepared pesto until thoroughly coated.

Serve: Divide the pesto courgette noodles between plates and top with sliced grilled chicken. Garnish with lemon wedges if desired.
