Poultry Broth
1 chicken or turkey carcass, skin removed, cut in pieces 12 cups water 1 onion, chopped 1 carrot, chopped 1 stalk celery,Ingredients
- 1 chicken or turkey carcass, skin removed, cut in pieces
- 12 cups water
- 1 onion, chopped
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 bay leaf
- 1 garlic clove, crushed
- dash black pepper
- pinch dried thyme
- pinch dried rosemary
Method
- Place all items in a large soup pan or crock pot and bring to a boil. Reduce to a simmer and cook for 1-1/2 hours on low heat (you can double this time in a crock pot if you wish).
- Remove the bones and seasonings and chill immediately in a shallow container. Remove the fat that rises and solidifies on top.
- Use immediately or freeze in ziplock bags in 1 cup portions up to one year.
- This broth is great for soups, rice and pasta dishes.
