Ingredients

  • 1 chicken or turkey carcass, skin removed, cut in pieces
  • 12 cups water
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 bay leaf
  • 1 garlic clove, crushed
  • dash black pepper
  • pinch dried thyme
  • pinch dried rosemary

Method

  1. Place all items in a large soup pan or crock pot and bring to a boil. Reduce to a simmer and cook for 1-1/2 hours on low heat (you can double this time in a crock pot if you wish).
  2. Remove the bones and seasonings and chill immediately in a shallow container. Remove the fat that rises and solidifies on top.
  3. Use immediately or freeze in ziplock bags in 1 cup portions up to one year.
  4. This broth is great for soups, rice and pasta dishes.
