Ingredients
- 1 cup green lentils
- 1 medium size yellow onion chopped
- 2 chopped tomatoes
- 1/2 cup chopped parsley
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon ground cumin
- 1/2 squeezed lemon
- Freshly ground pepper
Method
Place pre-washed lentils with three cups of water and cook for 30 minutes. Drain and leave to cool. Place lentils in a bowl and add onion, tomatoes, parsley and garlic. Season with cumin, lemon juice and pepper and serve. This salad looks very nice when presented on a platter.
