Ingredients
- 1/2 teaspoon coconut oil
- 1 clove garlic, minced
- 1/2 onion, chopped
- 400g extra-lean ground turkey
- 100g cooked brown rice
- 100g cooked lentils
- 1/2 bunch fresh basil
- 1 tablespoons grated Parmesan
- 1/2 tube tomato paste
- 1 egg white
- 1/2 teaspoon garlic powder
- black pepper to taste
- 50ml ketchup (no added salt)
Method
Preheat oven to 350 degrees F. Fry the onion and garlic in the oil until golden for about 3 minutes. Place this mixture in the freezer to cool. Grind the rice, lentils and basil together in a food processor. In a large bowl, combine the ground turkey, rice mixture, onion mixture, tomato puree, egg white and seasonings. Mix this well and place in a loaf pan. Bake at 350 F for 40 minutes; drain any excess fat; coat with ketchup, and bake for 10 more minutes. Allow to sit and then cut and serve hot.
