Lemon & Herb Grilled Cod

Ingredients:

4 cod fillets (approximately 150g each)

2 tablespoons olive oil

Juice and zest of 1 lemon

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh dill, chopped

Salt and black pepper to taste

Lemon wedges for serving (optional)


Instructions:

Prepare the Marinade: In a small bowl, mix the olive oil, lemon juice, lemon zest, garlic, parsley, dill, salt, and pepper. This will create a fragrant marinade.

Marinate the Cod: Place the cod fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well coated. Let them marinate in the refrigerator for at least 30 minutes to allow the flavours to infuse.

Preheat the Grill: Heat your grill or grill pan to medium-high.

Grill the Cod: Remove the fillets from the marinade and place them on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

Serve: Transfer the grilled cod to a serving plate. Garnish with additional lemon wedges and fresh herbs if desired.
