Scrumptious High-Protein, Low-Carb Recipe: Turkey and Spinach Stuffed Bell Peppers

Turkey and Spinach Stuffed Bell Peppers

These stuffed peppers are filled with a delicious mixture of lean turkey mince, fresh spinach, and aromatic herbs, providing a balanced and filling meal.

Ingredients:

4 large bell peppers (any colour)

400g lean turkey mince

100g fresh spinach, chopped

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon paprika

Salt and black pepper to taste

50g feta cheese, crumbled (optional)


Instructions:

Preheat the Oven: Set your oven to 180°C (356°F).

Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.

Cook the Filling: Heat the olive oil in a large frying pan over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent. Add the turkey mince and cook until browned. Stir in the spinach, oregano, paprika, salt, and pepper, and cook until the spinach wilts.

Stuff the Peppers: Fill each bell pepper with the turkey and spinach mixture evenly. If using, sprinkle feta cheese on top of the stuffing.

Bake: Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Serve: Allow to cool slightly before serving. Enjoy as a complete meal or pair with a fresh green salad.
