Salsa-Baked Fish

1 teaspoon oil
1/2 medium onion, chopped
1 large tomato, cored & chopped
1/2 green bell pepper, chopped
1/4 cup chopped cilantro
1/2 cup chicken broth
Dash hot sauce
4 4-ounce fillets lean fish snapper, cod or grouper

Preheat oven to 350 degrees. Heat large ovenproof skillet over medium-high heat. Add oil and sauté onion until golden, about 3 minutes. Add the tomato, pepper, cilantro, chicken broth and hot sauce. Place the fish fillets on top of the salsa; cover and bake in the oven until done, about 10 minutes. Serve hot – we recommend pairing with brown rice and steamed veggies. Garnish with fresh lime wedges.

Note: You can substitute oregano for the cilantro for an Italian-baked fish.
