Crockpot Lentil Rice Soup

Cooking Tips:

Experiment with the mushrooms you use in this dish. We recommend cremini, also known as baby bellos, but plain white mushrooms also work.

The slow cooker makes this soup while you work or run holiday errands.

400g dry lentils
400g uncooked brown rice
1 1/2 chopped carrots
1 chopped celery stalk
1/2 onion, chopped
2L water
400ml chicken stock
1 tsp garlic powder
black pepper to taste
1 tsp dried oregano
1 bay leaf
1 cup sliced mushrooms

Place the all ingredients except mushrooms in a slow cooker. Cover and cook on low setting for 7 to 8 hours or on high for 2-3 hours. Stir in the mushrooms 30 minutes before serving.
