Breakfast Tortilla

Total Preparation & Cooking Time: 10 minutes (5 min Prep, 5 min Cook)
Cooking Tips: No egg substitute? Use the same amount of egg whites.

1/2 teaspoon vegetable oil
1/4 cup chopped onions
1/2 cup bell peppers
1/4 cup non-fat egg substitute or egg white
1 chopped tomato
1 whole wheat fluor tortilla
1/2 teaspoon hot pepper sauce
1/4 teaspoon oregano

Heat oil in skillet and add onions. Saute until transparent and add peppers and saute for about 3 minutes. Add the egg substitute and cook and scramble until done.

Wrap tortilla in plastic wrap and heat in microwave for 10 seconds. Place egg on top of tortilla and top with chopped tomato, hot sauce and oregano. Roll the tortilla up into a wrap sandwich and serve hot.
