Ingredients

  • 400g canned white beans
  • 250g frozen broccoli, thawed
  • 500ml skim milk (preferably fortified skim milk*)
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • black pepper to taste

Allergens: Milk

Method

  1. Puree beans and broccoli together with skim milk in a blender.
  2. Add mixture to a large soup pot or microwaveable container along with the rest of the ingredients.
  3. Bring to a boil on top of the stove or in the microwave.
  4. Stir and serve hot.
  5. We recommend serving this soup with a large salad.
  6. Optional garnish: Sprinkle light shredded cheddar on top of the soup.
  7. (Sodium can be reduced by 30% if you rinse the beans.)
